Crottin de Champcol
Crottin de Champcol is a pasteurised version of Crottin de Chavignol. Made from pasteurised goat’s milk, this soft cheese is named after the village of Champcol, France, located in the Loire Valley. When young (Chavignol jeune), the interior is solid and compact, and its rind is white. As it matures into the fully aged (Chavignol affiné) version, the interior becomes crumbly, and the mould on the rind turns bluish.
Crottin de Champcol is a great table cheese that is used in baking or in salads depending on its age. A bottle of Sancerre accompanied by fruit, bread, and Crottin forms a marvellous combination.
