Le Brebiou is a sheep's milk cheese produced and refined in the Pyrenees Atlantiques region of France. It has a soft texture with a firm, smooth paste and velvety, bloomy rind. The creaminess of sheep's milk and the rich, green pastures give the Brebiou a smell of fungus and a sweet, milky taste that becomes tarter toward its centre. Apart from various packed forms, there is also a light version called Brebiou ligne et Plaisir, containing only 10% fat.
