Gratte-Paille
Gratte Paille is a French, triple-cream cheese invented in the 1970's by a creamery in Seine-et-Marne. The name which translates as gratte (scratch) and paille (straw), comes from the straw mats used to dry and ripen the cheese.
Gratte Paille is made from cow's milk. It is a soft-white cheese with bloomy white (edible) rind, mushroom flavour and oily texture. Instead of standard cylindrical wheels, the cheese is hand-molded in brick shaped blocks.
The cheese is usually served along with other foods such as strawberries, vegetables and chicken. It can also be served with slightly tannic red wine or champagne.
