Made from cow’s milk, it stands as one of France’s oldest cheese varieties, with roots tracing back to the 6th century AD. It received AOC (Appellation d'Origine Contrôlée) status in 1969. Neufchâtel undergoes maturation for 8 to 10 weeks. It's typically sold in heart shapes but also produced in log forms.
