Auld Lochnagar
Made from unpasteurized cow's milk at the Cambus O'May Cheese Company in the eastern Cairngorm mountains of Scotland, Auld Lochnagar follows an ancient family recipe. It undergoes a maturation process of up to 12 months in cold, damp rooms, with regular turning. The fully matured cheese presents a crumbly texture and features tangy, nutty flavours with a fresh finish.
