Boeren-Leidse met sleutels (also known as Boeren Leidenkaas ) is traditional farm-made cheese protected by a PDO (Protected Designation of Origin) certification. For more than 500 centuries, the production of this Dutch cheese has taken place in the vicinity of the Sleutelstad Leiden.
Traditional Boeren-Leidse is cumin-infused semi-hard farm cheese with a firm and somewhat crumbly texture. This is because it is prepared from raw, semi-skimmed milk with a fat content between 30 and 40%. It is aged for at least 3 months and up to 24 months. The wheels are covered in a red-brown, waxed rind, which is not suitable for eating. Boeren-Leidse met sleutels can be easily recognized by the crossed keys logo imprinted on it by the Members of the "Association of Farmers Leiden Kaasmakers".
This cheese has a powerful, rich flavour with an extra zing of cumin. It is gently aromatic and becomes more fruity and intense as it ripens.
