Cashel Blue is aged for about three months, and during this time, it develops characteristic flavour and texture.
The cheese has a natural rind and a pale ivory interior with distinctive blue veining spread throughout. It pairs well with fruits, nuts, and honey, and it can also be crumbled over salads or melted into sauces.
