What is Coolea Cheese?
Coolea, a pasteurised cow's milk cheese, is made on the Willems family farm in Coolea Co. Cork, Ireland, using an ancient Dutch Gouda recipe. Ripening for a minimum of two months, this cheese boasts a semi-hard to hard texture. As it matures for up to 18 months, its flavour evolves into a delightful sweetness, accompanied by a drier paste.
The Coolea Cheese comes in various varieties, including Coolea Plain, Coolea Extra Matured, Coolea with Cumin Seed, and Coolea Matured.
