When most people think of cheese, they think of Europe. The words ‘American cheese’ conjure up horrible images of neon orange “cheese” in plasticky slices or in a spray can. French cheese, on the other hand, makes you think of baguettes with thick slices of camembert or soupe à l’oignion covered in bubbling and browned Gruyere. When you hear ‘Italian cheese’, it’s the salty parmigiano reggiano or soft mozzarella thickly sliced with tomato and fresh basil that spring to mind.
