Niolo (Niulincu) is a Corsican cheese made in the Niolo region of Golo Valley in Corsica. Niolo is a soft, wash-rind cheese made from sheep's or goat's milk. The cheese is aged for 3 to 4 months in a humid cellar, which gives it a distinctive odour and sticky consistency.
