What is St Jude Cheese?
St Jude is a soft cheese, originally made in Hampshire by Julie Cheyney, now made at Fen Farm Dairy in Suffolk. It is made using unpasteurized cow's milk and animal rennet. St Jude has a very thin mould rind with a smooth paste and a fluffy, light texture. The flavours are rich and buttery, and the cheese is usually eaten between 2-5 weeks.
