What is L'Étivaz Cheese?
L'Étivaz is an Alpine-style cheese, similar to Gruyère. It is made by heating the raw milk of cow over wood fires in massive copper cauldrons, imparting the curds with a unique smokey flavour. The range of flavours can include tropical fruit, savoury bacon, hoisin sauce, nutmeg, and an enticing hint of salinity.
Notably, L'Étivaz is listed in the top 20 cheeses at the 2024 World Championship Cheese Contest (WCCC).
